Skinny Very Berry Smoothie
Myyyy smoothie brings all the boys to the yard…. sorry, I’m the worst.
So, it’s been an average of 103 degrees in Florida this past week (I wish I was making that atrocious number up), and therefore, my body is actively rejecting solid foods. Just last Thursday, I came home from work & at 5:30 pm it was still over 90 degrees. NOPE. I thew on my bathing suit, grabbed the book I was currently reading, and hit the pool.
After a few hours of mindless floating around, I dried off and headed home to look aimlessly in my fridge. [side note- if I could spend my entire life around/in a body of water, I would. Anyone else feel the same?]
While going back and forth between what I had: light shrimp pasta? Sweet & spicy stuffed squash? Hummus crusted chicken? None of it (which is saying a lot because those 3 things are my favvvvorite) was standing out to me. That’s when my brilliant side took over (okay, so I actually just opened the freezer, but STILL!) Ding ding ding… I had frozen fruit! And yogurt! And other really tasty things that make really tasty smoothies!
A few summers ago when I was working at the Embassy, my friend Ali and I would joke about only eating foods in liquid form. Of course this wasn’t actually true, but we both had a love for smoothies, flavored spa waters, Pimms… 😉 So this brought me right back. (MISS YOU ALI!)
You Need:
- 1 & 1/4 cup of frozen fruit [I used a mix of raspberries, strawberries, and blueberries]
- 3/4 cup low fat plain Greek yogurt
- 2 tablespoons of Justin’s Vanilla Almond Butter [sure, any nut butter would do but OMGOSH if you haven’t tried this flavor DO IT NOW]
- 1 cup of water [more or less depending on your desired consistency]
- About a cup of ice
- 1 tablespoon of chia seeds [to top with after]
Everyone here knows how to make a smoothie, so I won’t humor you. Just blend and add more or less ice & water depending on your specific taste buds! Save the chia seeds for last & top those babies on the finished product.
