Nourishing Detox Veggie Soup

I’m not sure about you, but after the weekend, my body craves nourishing, detoxing foods. As part of a healthy life balance, I tend to stick with homemade, healthy foods throughout the week. Once the weekend arrives, while I still try to maintain some sort of level of healthiness, I go out to eat, order things I typically wouldn’t, and am just generally carefree.

Sunday is my day of meal prep, as well. Last Sunday, I took a look in my fridge and noticed I had a lot of produce that was on the verge of going bad if I didn’t use it up. One of my favorite things to do with ripe produce is to make soups! I wanted something that was going to be low fat, low in calories, high in healthy fibers, and nourish my body while detoxing it from the weekend all at the same time. I carefully chose which ingredients to slow cook this soup with the give maximum flavors & nutrients.

What You Need:

  • 1/2 head of red cabbage
  • 4 cups of raw kale
  • 1 1/2 cup of diced tomatoes (I used tri colored ones of red, yellow, and purple)
  • 1 large white onion
  • 1 large green bell pepper
  • 4 cups veggie stock
  • 2 tablespoons of minced raw garlic
  • 1 tablespoon of ground ginger
  • 1 tablespoon of black pepper
  • Squeeze of 1/2 lemon* [optional]

Red Cabbage: High in vitamin K, vitamin C, aids in eye health, & a cancer preventive [read more]

Ginger: Mood lifter, reduces muscle pains, anti-inflammatory, fight infections, cancer preventative, lower blood cholesterol, & aids in indigestion [read more]

Lemon: Detoxes your liver, high in vitamin C, aids in 22 anti-cancer compounds, and basically just cleans up all your insides [read more]

Nourishing Detox Veggie Soup

Wash & chop all of your produce & add it to a big pot. Top with the veggie stock, ginger, garlic, and lemon juice.

Turn your stove to medium low until your soup turns to a simmer. Allow soup to simmer for about 30-40 minutes.

Nourishing Detox Veggie Soup

You can serve this right away or store in the fridge for later use.

Allowing the soup to sit over night only heightens the flavors!
