Baked Hummus Crusted Chicken; a one-pan meal!
Last night while contemplating dinner ideas, I was stumped. I needed to go grocery shopping after work, so I knew that I needed something quick to throw together with minimal ingredients.
After searching around Pinterest for inspiration and saw this recipe for hummus crusted chicken, I became immediately interested. I lovvve hummus, I love easy recipes, and better yet- this recipe was ready to go in 40 minutes (prep, cooking, EVERYTHING!)
After a few modifications and a very happy boyfriend, this recipe has been stowed away to the top of my “Go-To Recipe List”. (which is really just a fancy name for my head) 😉
All You Need:
- 4 skinless chicken breasts
- 1 cup of your favorite hummus
- Veggies of your choice*
- Extra virgin olive oil
- Pepper, onion powder, garlic powder
*For veggies, I used yellow potatoes & asparagus. Peppers, onions, broccoli, carrots, Brussels sprouts, and cauliflower would also work really well!*
This is the hummus I used- it was soooo amazing.
In a large baking dish, toss veggies equally with EVOO & season well.
Place the 4 skinless chicken breasts right on top of your veggies and season the chicken well.
Cover each chicken breast with ¼ cup of hummus.
Heat your oven to 425 degrees and cook for about 35 minutes until your chicken is cooked fully through & your veggies are softened, but still crunchy!
GUYS. The hummus will form a CRUST. Yepp. Who knew? Ah-may-zing.
Also, the hummus helped keep the chicken really moist (sorry for all that cringe at that word). So much so that I didn’t even use sauce. Me, the queen of all sauce, did not even take them out of the fridge. *mini celebratory dance*
