Light & Creamy Roasted Garlic Hummus

I have a pretty large obsession with hummus. In snack form? Perfect. For a light lunch? Yum. Incorporated into a dinner? Even better. This past weekend, we went to our friend's going away party and I needed something to whip up quickly and bring with me. After rummaging through my cabinet, hummus came to mind, and who doesn't like hummus? (If you don't like it, tell me howww!) This recipe is the most delicious yet minimalistic in ingredients- which I am a huge fan of. You'll Need: 1 can of chick peas 1-2 tablespoons of minced garlic* (I sauteed it quickly to get that roasted taste) 3 tablespoons of EVOO 3 tablespoons of Tahini *If you're not a fan of garlic, you can leave it out! You can also sub it with other flavors,…

Raspberry Ginger White Balsamic Chicken

Raspberry Ginger Balsamic Chicken

Let's get honest with each other for a moment, nobody has time to cook crazy meals during the week while working or going to school full time. [Unless you're some super human, like Julia Childs or Blair Waldorf (..I think she's queen of all she does)]. That's where my love for one-panned meals comes in. [You guys remember this Baked Hummus Crusted Chicken, right?]   A local winery in St. Augustine sells different flavors of white & regular balsamic vinegars. I snagged this tasty raspberry ginger flavor the last time I made a trip. (You can find a similar Blackberry Ginger Balsamic here!) Flavored balsamic vinegars  are a great low-cal substitute for classic dressings and sauces. Not only are they healthier, but they're very versicle! You can pair this with a cheese & bread…

Lemon Garlic Shrimp Kabobs

Now that the mid 90's have made themselves comfortable and oh so welcomed, I'm officially in full summer mode. One of my favorite summer food preps is to keep marinated, raw shrimp in my fridge. Shrimp is just one of those staple go-to's that you can't beat. Not only is it versatile in flavors, healthy, and tasty, but it also cooks in 3-5 minutes. (yes, please) In a Tupperware container (I like to keep it fancy), I combined: 1 pound raw shrimp (deveined // without the tails // cleaned) 2 tablespoons EVOO 2 tablespoons minced garlic 1/2 squeezed lemon Onion powder & cayenne pepper (to taste) After 2-3 days, I patted myself on the back for being so patient & keeping them in there as long as I did, skewered them onto some kabob sticks…

Broccoli & Bacon Muffin Omelets

Egg Muffins

It's no secret that I'm a huge fan of breakfast meal prepping. It just saves soooo much time, and tbh, who likes to actually get out of bed early on weekday mornings? I've shared with you Egg Muffin Omelets once before (back when I called them "cupcake omelets") but these are packed with completely *new* ingredients [and who doesn't love different variations of recipes? ;) ] All you'll need: [to make 12] 8 large eggs 1/4 cup unsweetened cashew milk (any type of milk will do) 5 slices of cooked turkey bacon 1 cup steamed broccoli 3 mini red bell peppers 3 mini orange bell peppers 1/4 cup white onion Parmesan cheese *You're also going to need a muffin pan and sprayable olive oil Steps: Preheat your oven to 350 degrees Heavily spray down…

Protein Packed, Low-Fat Ranch Dressing

Homemade Healthy Ranch Dressing

Guys. Guys. GUYS! Protein packed, low fat, low cal, and dare I say it, *healthy* ranch dressing was made this weekend! Okay, confession time. I am a total ranch lover. Although, restaurant/homemade ranch definitely steals my heart. One time, my friend Tyler sent me a picture of a gigantic ranch dispenser at the zoo because it reminded him of me. So, yes, you can say I'm in a pretty serious relationship with this condiment. I've been on a salad & homemade dressing kick these past few months, but this little Mason jar of goodness takes the cake. So, let's break this down real quick: Hidden Valley Ranch, America's number one boo packs 140 calories in 2 tablespoons. My homemade ranch? 24 calories in 2 tablespoons. So yes, come and join me on my ranch…

Roasted Balsamic Glazed Cranberry Pecan Brussels Sprouts

Roasted Balsamic Glazed Brussels Sprouts

Oh, Brussels sprouts, the most misunderstood veggie out there. [Side note- did anyone else know it's spelled Brussels sprouts & not brussel sprouts? You really do learn something new every day ;) ] I was on a mission: make my boyfriend like Brussels sprouts. It was a pretty large goal to tackle, but I was up for it. I'd already won this battle once, so I was full on ready to win again. ;) I've always loved vegetables, in any variation, so I've jumped up on the sprout's bandwagon long ago. I was sold; Dj, not so much. Everything is better with balsamic glaze on it, so I started there. After roaming through my pantry, these ingredients popped out- and would you believe it- Dj ate the whole dish! You Need: 1 bag of…

Cheesy Chicken Omelets

Is there anything better after a long weekend than a fluffy, cheesy, jammed packed with goodness omelet? This weekend, Dj and I drove to my mom's house in North Carolina. It's a looooong, 9 hour drive, so the last thing I want to do when getting home is putting together a crazy meal. I'm looking for comfort food, warm, and extremely low-hassle. I'm a big fan of breakfast for dinner, so omelets it was! You'll Need: 2-3 eggs 3 tablespoons of skim or almond milk Asparagus Spinach White onion Grilled chicken (about 1 tenderloin) 1 wedge of Laughing Cow cheese Pepper, onion powder, garlic powder 1 tablespoon of EVOO I used left-over chicken using this marinade! Any type of grilled chicken would work, though.   In a skillet, heat up the EVOO &…
