I've come to the conclusion recently that I choose foods based on sauces. Sauces are my biggest weakness, and honestly, the only reason I eat things, such as french fries, is because of how much I love ketchup/ranch/honey mustard/sweet chili sauce... I can go on and on. Well, it took me long enough, but I'm finally on the overnight oats boat! I love hot oatmeal so much that I didn't think it could get better... until this stuff came along! It's the perfect thing to make ahead and grab on the go. I would recommend making them only 3 days in advance, however, so if you wanted to meal prep them for your work week, make 3 on Sunday and 2 on Wednesday. Oh, and making them in mason jars? You guys are well aware for my love of meal prepping. While it may seem daunting, set aside 2 hours on a Sunday and you're set for the week! This Monday I thought I'd share with you a favorite breakfast prep of mine. Frittatas! Frittatas are basically quiche's cousin. You simply omit the crust [or, find creative healthy alternatives to crusts, like spaghetti squash!] Eggs, oatmeal, yogurt, smoothies, and fruit are my breakfast go-tos.
