Cheesy Chicken Omelets
Is there anything better after a long weekend than a fluffy, cheesy, jammed packed with goodness omelet?
This weekend, Dj and I drove to my mom’s house in North Carolina. It’s a looooong, 9 hour drive, so the last thing I want to do when getting home is putting together a crazy meal. I’m looking for comfort food, warm, and extremely low-hassle. I’m a big fan of breakfast for dinner, so omelets it was!
You’ll Need:
- 2-3 eggs
- 3 tablespoons of skim or almond milk
- Asparagus
- Spinach
- White onion
- Grilled chicken (about 1 tenderloin)
- 1 wedge of Laughing Cow cheese
- Pepper, onion powder, garlic powder
- 1 tablespoon of EVOO
I used left-over chicken using this marinade! Any type of grilled chicken would work, though.
In a skillet, heat up the EVOO & sauté your asparagus & onion for about 3 minutes on high until the veggies get soft.
After your veggies get soft, add the chicken and spinach.
Mix up your milk & eggs and pour into your mixed chicken & veggies. Season well!
Flip over your omelet once one side is fully cooked & add the wedge of Laughing Cow cheese. I love all types of Laughing Cow cheese, but here I used the low-fat original kind.
Flip & let the cheese melt then enjoy!
