I realize not alllll of you have Instagram [although I'm extremely obsessed with it and don't understand how not everyone can not be ;) ], so I thought I'd share with you all some of my simple go-to's I typically reserve for my Insta! I have a bit of an obsession with oatmeal. Umm, do you recall this chocolate peanut butter cup or this chocolate covered strawberry recipe??? (drooool). My staple breakfast is most likely oats. It's no secret that I'm a huge fan of breakfast meal prepping. It just saves soooo much time, and tbh, who likes to actually get out of bed early on weekday mornings? I've shared with you Egg Muffin Omelets once before (back when I called them "cupcake omelets") but these are packed with completely *new* ingredients [and who doesn't love different variations of recipes? ;) ] All you'll need: [to make 12] 8 large eggs 1/4 cup unsweetened cashew milk (any type of milk will do) 5 slices of cooked turkey bacon 1 cup steamed broccoli 3 mini red bell peppers 3 mini orange bell peppers 1/4 cup white onion Parmesan cheese *You're also going to need a muffin pan and sprayable olive oil Steps: Preheat your oven to 350 degrees Heavily spray down…

Cheesy Chicken Omelets

  Is there anything better after a long weekend than a fluffy, cheesy, jammed packed with goodness omelet? This weekend, Dj and I drove to my mom's house in North Carolina. It's a looooong, 9 hour drive, so the last thing I want to do when getting home is putting together a crazy meal. I'm looking for comfort food, warm, and extremely low-hassle. I'm a big fan of breakfast for dinner, so omelets it was! Prepared for Warmer Weather: Drinks & Salads

  When the weather begins to heat up, my food & drink preferences change. I no longer crave cooler weather comfort foods like soup or heartier meals, such as chili (even though it's delish). I begin to migrate towards salads, smoothies, iced coffee, cold wraps, hummus inspired dishes, lighter choices for everyday snacking, and plenty of fruits in different varieties! Whole Wheat Egg White Open-Faced English Muffin

  When it comes to weekday mornings, I choose my bed 100% of the time. I always am looking for adding different variations of quick breakfasts to my mix so that I don't get bored, but try to keep it healthy all at the same time! My recent, simplistic go-to that I can whip up in under 5 minutes before heading to work is this Whole Wheat Egg White Open-Faced English Muffin. Everyday Eats & My Starbucks Order!

Starbucks will always have my heart. In high school, my brother worked as a barista and would always bring me back my favorite coffee order (venti iced chai or grande hot white chocolate mocha)! Since then, my order has changed up a bit after becoming more health conscious. (Not saying I never sneak in a white chocolate mocha or chocolate croissant from time to time..) My new favorite go-to is a Venti Iced Coffee with Coconut Milk & 6 Pumps Chai. I can never stray too far from my original love.. ;) Did you know that the iced coffee has the highest levels of caffeine on their entire menu? (Caffeine = life). Turkey Bacon & Veggie Egg Frittata

Sunday’s are for meal prep! When it comes to breakfast, everyone is different. During the week, I stick to either oatmeal, yogurt, or fruit. I also can’t eat until at least an hour after waking up & drinking a cup (or two..) of coffee. My boyfriend, on the other hand, is not like that, and needs more substance to power him through his mornings. I enjoy everything about the kitchen (surprise, surprise), so I cook for us 95% of the time. Wanting to give my bank account a break, I decided to challenge myself to use the weekends to try out new recipes I’ve been storing away and calculate just how much that ended up saving me!
