When it comes to weekday mornings, I choose my bed 100% of the time. I always am looking for adding different variations of quick breakfasts to my mix so that I don’t get bored, but try to keep it healthy all at the same time!
My recent, simplistic go-to that I can whip up in under 5 minutes before heading to work is this Whole Wheat Egg White Open-Faced English Muffin.
All you need:
- 1 whole wheat english muffin – [toasted]
- 4 egg whites- [cooked with EVOO, pepper, and garlic powder]
- 1 wedge of pepper jack Laughing Cow cheese
- 2 thick slices of tomato
This breakfast is quick to make & under 200 calories! Perfect for the mornings when you need a lighter pick me up option!
