Starting off my mornings with oatmeal has become my latest obsession. For one, it’s warm and comforting, and it also comes jammed packed with health benefits. Being low in saturated fats, high in fiber to keep you full, and oats are also extremely versatile to work with! I’m feeling a little under the weather, so took today off from work, and needed something warm for my throat. Besides tea, oatmeal is another great comfort food for when you’re feeling sick. Low-fat Spaghetti Squash Breakfast Quiche

Making breakfast that lasts my throughout the work week is one of my favorite things to do. I’ve talked about my love-affair with my bed many times before, so preparing meals beforehand helps a looooot. I absolutely am obsessed with spaghetti squash. I make it at least once every other week- it is so simple and healthy! A cup of spaghetti squash is only 35 calories and is extremely versatile to work with. Typically, I use it as a replacement for pasta, but I decided to play around trying to find other carb-free alternatives; and, let me tell you, this stuff was a huge hit. Baked Caramelized Grapefruit

Grapefruit is pretty much a magic fruit. It’s full of vitamin C, aid in natural weight loss, and even help keep you from getting sick! It’s also one of those fruits where you either love it or hate it. Most people don’t like it because it can be extremely tart- however, if you bake it, it will naturally caramelize and become almost dessert-like! Which is exactly what I did here. What you need: One medium/large grapefruit 2 tablespoons pure honey 2 tablespoons ground cinnamon Slice the grapefruit in half & place it half up in a deep pan with about an inch of water. Drizzle 1 tablespoon of pure honey on each side of the grapefruit & then top with the cinnamon. Place in an oven at 375 degrees for about 30 minutes. You’ll…

There’s something about breakfast food that’s just very comforting. Call me crazy, but I prefer eggs, pancakes, and other breakfast goodies over any other meal. (Okay, not including dessert)..
