When it comes to my morning routine, I'm all about convenience and quickness. By the time I actually convince myself to get out of bed during the week, I try to be out of the door in under 30 minutes. It helps that I don't like to eat first thing in the mornings, so being able to grab something on my way out the door to eat once I get to work is key. I'm a big fan of both cottage cheese (in breakfast form, as well as in lunch/dinner form), as well as utilizing Greek yogurt in a number of ways. Being that I don't like to eat the same thing each and every day, I decided to add two variations of these cute Mason jar parfaits so I have an option which…

When I was younger, Thanksgiving was my least favorite holiday. I wasn't that much of a fan of turkey, I wasn't big on sitting at a table for hours, and I definitely wasn't favoring holidays that didn't include presents. ;) Since then, my preferences have changed. I am now a huge fan of Thanksgiving- especially since I live so far away from my family & it allows me to travel to visit them at least this time of the year. This past Thanksgiving, I saved up enough time from work to fly out to California and visit my family. :) Love my family! We had a few wine nights... Candid shots are the best! Sisters are great. I love my brothers too, of course, but this break we only had the girls. We decided…
If you're one of those people that are able to wake up before work or class, shower, get ready, and eat breakfast all before leaving your house, PLEASE teach me your ways! I am the absolute worst at it. To help myself with my morning laziness (or as I prefer, just prioritizing my beautiful bed), I've started incorporating quick meals I can make at my house before heading out the door. My latest obsession: avocado toast/English muffin From start to finish, this dish takes about 5 minutes total. It's composed of healthy fats & carbs to keep you full throughout the morning with healthy energy! Not to mention, it's amazingly tasty. Here's what you need: 1 whole wheat English muffin [I use the light 100 calorie ones] 1/2 avocado 1/8 fresh lemon Black pepper…
I know what you're thinking.. "the best ever banana nut muffins, really, the best ever?" But trust me on this, I do not use "the best ever" lightly. The muffins will convince you on your first bite; moist and cakey on the inside, a bit of crunch on the outside, all while staying nice and soft for days after baking! One of my friends at work asked me to make him some banana nut muffins, and since I never turn down an opportunity to bake, I dusted off an old bread recipe of mine and turned it into muffin form. I actually didn't tweak anything, but it cut the baking time in 1/2 so I actually prefer this much more than the bread. Muffins are great; they're small enough where you know what a…
Well, it took me long enough, but I'm finally on the overnight oats boat! I love hot oatmeal so much that I didn't think it could get better... until this stuff came along! It's the perfect thing to make ahead and grab on the go. I would recommend making them only 3 days in advance, however, so if you wanted to meal prep them for your work week, make 3 on Sunday and 2 on Wednesday. Oh, and making them in mason jars? Doesn't get much cuter or easier to toss in your bag on the way out the door and enjoy at work, school, or even in the car! Here's what you need: [serving size: 1 mason jar] 2/3 cup of oats 2/3 cup of unsweetened almond milk [+ a few tablespoons for later] 1…
One question I'm frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day. One series I began is my Instagram Round Up (catch up on series 1 & series 2!) but I thought if I did a simple "What I Ate on Wednesday" series, that would help to see what I ate from start to finish that day to give you some ideas. So, lets get to it! Breakfast: Breakfasts are simple and quick for me! I stick with a few different options (oatmeal, fruit, smoothies, cottage cheese, or eggs) This past Wednesday, I ate 1 cup of low-fat cottage cheese, 1 medium sliced up apple, and drizzled it with some local honey…
You guys are well aware for my love of meal prepping. While it may seem daunting, set aside 2 hours on a Sunday and you're set for the week! This Monday I thought I'd share with you a favorite breakfast prep of mine. Frittatas! Frittatas are basically quiche's cousin. You simply omit the crust [or, find creative healthy alternatives to crusts, like spaghetti squash!] Eggs, oatmeal, yogurt, smoothies, and fruit are my breakfast go-tos. I don't like anything too heavy in the mornings, but also need something quick since I have the biggest love affair with my bed (love you so much). Prepping eggs beforehand is really the only way to go when it comes to weekdays. On the weekends, I'll stick with making a fresh breakfast, but during the week, ain't nobody got…
Holy moly. I don't even know where to begin with these cookies. I made them yesterday and have already eaten the entire batch of 6. I started to tell myself to slow down- but... wait for it... they're healthy for you! So no, you don't need to slow down ;) This weekend, I wanted to challenge myself to stay *mostly* healthy. This meant, eating out less, drinking less, and lots of experimenting in the kitchen! I have a lot of tasty recipes coming your way due to this healthy weekend, but my gold ribbon winner were these cookies. They're perfectly chewy & soft on the inside with a crisp outside, hints of cinnamon, minimal ingredient list, and packed with that classic PB&J taste that I love. Here's what you need: [to make 6 cookies] 1…
