
Classic English Pimms Recipe
For 3 1/2 years, I spent the winter + summer seasons living abroad in London. It was definitely one of the best parts of my 25 years of life and I loved soaking up all the culture that encompasses that city.
One thing my friends + I would love to do was head over to one of the outside patios and split a pitcher of Pimms. Pimms is lower in abv than most mixed drinks, so it’s perfect to bring to a daytime bbq or event where you’ll be sipping for an extended period of time. It’s very light, not too sweet, and it’s packed with fresh ingredients to make it light and just scream right in your face: it’s summertime!
This past week, my family + some of our friends headed to the Outerbanks in North Carolina for a much needed relaxing summer vacay beach week! My mom found Pimms in a local liquor store + we were ecstatic. I’m soooo happy this London favorite has made it’s way to the good ol’ USA, so I thought I’d share the very best way to make this classic drink with you all.
- 1 bottle of Pimms
- 2 large oranges
- 1 package of strawberries
- Fresh mint leaves
- 2 cups of ginger ale or Sprite
- 1/2 large cucumber {not pictured but used!}
- Wash + slice up the oranges, strawberries, and cucumber
- Cover the fruit with the entire bottle of Pimms and let it soak in the fridge for about 2-6 hours
- Add 2 cups of ginger ale or Sprite to the pitcher with some fresh mint leaves*
- Divide the drink evenly into 6 glasses with ice + top with sprigs of fresh mint
*tip: roll the mint leaves in your fingers prior to adding it to the drink mix. This allows ample mint flavor to be released from the leaves.
Enjoy immediately, but this will keep well in the pitcher if using for an all day event.
