Lemon Garlic Shrimp Kabobs

Now that the mid 90's have made themselves comfortable and oh so welcomed, I'm officially in full summer mode. One of my favorite summer food preps is to keep marinated, raw shrimp in my fridge. Shrimp is just one of those staple go-to's that you can't beat. Not only is it versatile in flavors, healthy, and tasty, but it also cooks in 3-5 minutes. (yes, please) In a Tupperware container (I like to keep it fancy), I combined: 1 pound raw shrimp (deveined // without the tails // cleaned) 2 tablespoons EVOO 2 tablespoons minced garlic 1/2 squeezed lemon Onion powder & cayenne pepper (to taste) After 2-3 days, I patted myself on the back for being so patient & keeping them in there as long as I did, skewered them onto some kabob sticks…

Roasted Balsamic Glazed Cranberry Pecan Brussels Sprouts

Roasted Balsamic Glazed Brussels Sprouts

Oh, Brussels sprouts, the most misunderstood veggie out there. [Side note- did anyone else know it's spelled Brussels sprouts & not brussel sprouts? You really do learn something new every day ;) ] I was on a mission: make my boyfriend like Brussels sprouts. It was a pretty large goal to tackle, but I was up for it. I'd already won this battle once, so I was full on ready to win again. ;) I've always loved vegetables, in any variation, so I've jumped up on the sprout's bandwagon long ago. I was sold; Dj, not so much. Everything is better with balsamic glaze on it, so I started there. After roaming through my pantry, these ingredients popped out- and would you believe it- Dj ate the whole dish! You Need: 1 bag of…

Prepared for Warmer Weather: Drinks & Salads

When the weather begins to heat up, my food & drink preferences change. I no longer crave cooler weather comfort foods like soup or heartier meals, such as chili (even though it's delish). I begin to migrate towards salads, smoothies, iced coffee, cold wraps, hummus inspired dishes, lighter choices for everyday snacking, and plenty of fruits in different varieties! [My clothing choice also begins to lighten up. ;) ] The other day, it was 86 degrees & there was not a cloud in the sky. We went to one of my all time favorite Happy Hour spots, M Shack. I ordered the [above] drink which was a Green Tea Mojito. I love green tea, and I love mojitos, but together? That apprehensive curiosity quickly turned into die-hard love after one sip. This drink…

Top 10 Low-Carb Chicken Recipes

When it comes to dinners, I prefer something that can be quickly thrown together, doesn't require too many ingredients, nor too much time to cook. When you work all day, the last thing you want to do when you get home is throw together a Julia Style's intricate meal (we'll save that for the weekends!) I've also been trying to eat less complex carbs at nights and stick to filling veggies & proteins. Below you will find my favorite go-to low-carb chicken recipes that you can find on my plate pretty much bi-weekly! To be brought directly to the recipe, simply click on the name. :) 1. Baked Hummus Crusted Baked Chicken- a one pan meal! 2. Fruit & Nutty Skinny Chicken Salad 3. Mini Chicken Meatloaf 4. Light Shredded Chicken Tacos- in the…

Turkey & Veggie Spaghetti Squash; Food Prep

Food prepping on Sunday's has quickly turned into a weekly tradition of mine. When working full time and trying to stay social, it's easy to fall behind in your healthy food goals. By making a few go-to meal options that you can easily grab throughout the week, it really helps me stay on track, and also save some money! A few weeks ago, I made Ground Turkey & Veggie Spaghetti Squash for lunch options throughout the week. I've been trying to cut down on my carb intake, and spaghetti squash is such an easy & tasty way to do so! You'll Need: 1 large spaghetti squash 1 lb ground turkey (chicken or beef would also work) 1 large green bell pepper 1 large yellow onion A handful of cherry tomatoes 3 large handfuls of…

Fruit & Nutty Skinny Chicken Salad

Chicken salad has always been one of my all time favorite foods. It was my go-to order at Panera in high school and even followed me along to typical order in college. The one thing I don’t like about it is how secretly high calorie packed it is. I always though, meh, how bad can it be? It is mostly chicken, after all. Unfortunately, after realizing just how much mayo is involved, the disadvantages outweigh the advantages of this simple comfort food. However, (there is a light to the end of this somber fact!), this recipe counters ALL of that! It is my absolute favorite, boyfriend [highly] approved, and hopefully after trying it, you’ll feel the same! This recipe made 8 servings. 4 grilled (or baked) chicken breasts 1 cup sliced grapes (green, red,…

Light Shepherd’s Pie

Light Shepherd's Pie

One thing I love to do is take staple comfort foods and substitute out ingredients to make it healthier, but keep the same “this must be so bad for you” taste. I also love to cook big pans of food so that I can grab it for an easy lunch or dinner throughout the week! This Light Shepherd’s Pie covered both of those bases. :) [to make 9 servings] Bag of small red potatoes 2 cups of cauliflower 1 bag of frozen carrots (about 2 cups)** 1 bag of frozen corn (about 2 cups)** 1 bag of frozen green beans (2 cups)** 1 lb ground turkey, chicken, or beef. [I used chicken] 3 wedges of Laughing Cow Garlic & Herb cheese 2 tablespoons minced garlic Garlic powder/ onion powder/ pepper/ red onion flakes **You can…

Everyday Eats & My Starbucks Order!

Starbucks will always have my heart. In high school, my brother worked as a barista and would always bring me back my favorite coffee order (venti iced chai or grande hot white chocolate mocha)! Since then, my order has changed up a bit after becoming more health conscious. (Not saying I never sneak in a white chocolate mocha or chocolate croissant from time to time..) My new favorite go-to is a Venti Iced Coffee with Coconut Milk & 6 Pumps Chai. I can never stray too far from my original love.. ;) Did you know that the iced coffee has the highest levels of caffeine on their entire menu? (Caffeine = life). PLUS, it only has 2 calories, so it’s a double win in my book! Did you also know that Starbucks now offers…
