Weekend Update- Sushi & a Health Question

These upcoming weeks are going to be very interesting. Dj is in Japan for work, my friends are visiting their families for Easter, and I’m trying to figure out ways to keep myself busy. I’ve never been the best at being alone; I get bored EXTREMELY quickly. Take, for example, that it is only Saturday night & Dj and my friends have only been gone for about 30 hours and I’m already driving myself crazy. This morning, I made sure to sleep in, picked up a few things from the grocery store, went to the gym, got clean, watched Grey’s Anatomy, went to Joann Fabrics, picked up some food, and now I’m back to binge watching Grey’s. Baked Hummus Crusted Chicken; a one-pan meal!

Last night while contemplating dinner ideas, I was stumped. I needed to go grocery shopping after work, so I knew that I needed something quick to throw together with minimal ingredients. After searching around Pinterest for inspiration and saw this recipe for hummus crusted chicken, I became immediately interested. I lovvve hummus, I love easy recipes, and better yet- this recipe was ready to go in 40 minutes (prep, cooking, EVERYTHING!) Did this week go by extremely slow for anyone else? I am so excited for the weekend! I don’t even have anything special planned.. which I’m actually really happy about for once. I recently joined a gym to see if that helps motivate me (so far, mixed results). They do offer unlimited classes, though, so I’m going to try to make it to spin at 9am Sunday morning. I have been on the BIGGEST pizza kick lately. That’s how I am with a lot of different foods; I fluctuate between craving it constantly, to not eating it for weeks. These past 2 weeks, pizza has been calling my name pretty much every day. With everything in life, moderation is key. Typical Weekday Dinner

I haven’t done a post like this in awhile, but sometimes simple recipes are the best! The other day, my friend, Tyler, and I went to the gym. After a nice workout, we made dinner together- it was so quick & easy, but really tasty & satisfying! I made the broccoli and sweet potato crisps. I sliced the sweet potatoes up thin and roasted them in the oven. You can read about what I season them with/how I bake them HERE! It’s my favorite way to eat sweet potatoes. I simply steamed the broccoli in water & garlic powder. After they were softened (but still a little crunchy), I sprinkled a little bit of sea salt on them. Tyler cooked the shrimp & the asparagus. My motivation has been found! After a weekend of fun with my younger sister, Jaclyn, visiting, my body put itself on strike. The mix of weekend mimosas, eating out for basically every meal, and not getting sleep, I was feeling awful come Sunday. So, since then, I have made a personal challenge with myself to stop eating out so much, cut back on going out during the weekends, and actually take advantage of the beautiful place I live in by working out often. Jason’s Deli; Workday Lunches

Jason’s Deli saves my life at least once a week. They have the biggest, most amazzzzzing salad bar. When you’re at work and need to run out and pick something up quick, it’s easy to think that a drive thru is the only way to go. With Jason’s they have the freshest food that you can be in and out of the door in 5 minutes- which is perfect for me! I love Whole Food’s salad bar, but they are sooo expensive. A typical salad from there ends up costing me an easy $15.00. At Jason’s, it’s one flat rate of under $8.00. This giant salad for about $7.50? Yes, yes, yes, please.
