Light Honey Garlic Shrimp with a Kick

Making your own marinades has many benefits. For one, they are cheaper, and they are also a lot healthier. This way, you don’t have all that added salt or sugar; you’re able to monitor and tweak it to fit your health requirements or specific taste buds. I’ve been on a pretty big shrimp kick lately, it makes me miss the summers grilling out by the pool or spending my weekends at the beach. Is anyone else starting to go a little winter stir crazy? It’s not even that cold down here in Jacksonville, but it’s definitely too chilly to spend my days on the water. So, if you’re feeling the same, just make some seafood and temporarily trick your mind into a summer mindset. ;) You’ll Need: 1 pound devained shrimp thawed (either raw…

Chicken Noodle Soup- Making Comfort Food Light

So something very unexpected happened to me a few weeks ago- I got pretty sick. One of those sicknesses where I didn’t have a voice for two weeks and went through many bottles of NyQuil. I am very used to getting sick during the winter; something about the constant changing of weather from it being in the 50’s on Monday and by Wednesday it’s 9 degrees and snowing that my (and everyone else’s) body simply hates. HOWEVER, when I moved down to sunny Florida and have been blessed with a winter of an average of high 60 degrees, I thought I had finally beat Mother Nature. I was sadly mistaken. I’m pretty sure that my body was having sympathy sickness for all you up North bearing this polar vortex… ;) One thing that I…

I am so excited- this is my first friend to tie the knot and I was asked to be her Maid of Honor! I’m thrilled. :) Anddddd, if you have been following for awhile, you know that I grew up in Southern California. Mini Chicken Meatloafs

Happy December! Who else already has ABC’s 25 Days of Christmas and their tree up and decorated? I live for this time of year! Being in Florida, instead of snow swept streets and knit gloves, I am currently in flip flops and 70 degree weather, but I still glow with holiday spirit. Before heading off to my mom’s new place in North Carolina last week for Thanksgiving, I raided my fridge. I’ve mentioned many times how much I hate wasting food, so I wanted to ensure that all my fridge’s contents were put to good use. Thus, baby meatloaf’s were born (or cooked, at least). Typically, meatloaf needs to cook for at least 45 minutes. I didn’t have that kind of time, I was hungry and very impatient. (That happens a lot if you…

Turkey Veggie Stuffed Peppers- Low Carb!

The other night, I went to the gym after work, came home starving, and stared blankly into the fridge. I’m trying not to waste any food, so that means I’ve been grocery shopping less so that I don’t end up throwing out food. This was one of those times where I was in between grocery hauls and had minimal dinner options, so I had to improvise. I had thawed ground turkey, a few veggies, and that was about it. I considered pasta but I’m attempting to cut down on carbs, and then stuffed peppers came to mind! Stuffed peppers are one of those staple, easy, go-to meals. You can switch it up with what you have on hand, and I love those kinds of recipes! This recipe makes 6 peppers, but I only had…

Curbing Sweets Cravings- Banana Bowls

The other night was one that I just couldn’t seem to fix my sweet tooth. I needed something sweet, but filling so that I wouldn’t convince myself to grab “jut one” cookie later. ;) This simple, 3 ingredient bowl was the perfect solution. All you need: -1 cut up banana -1 tablespoon unsalted raw almond butter -½ tablespoon any kind of jam/jelly/honey that you want. I would recommend using my Healthy 3 Ingredient Strawberry Jam because it’s so simple & good for you, but I cheated a little and used orange marmalade. It’s my favoritttte. Below are some other of my favorite ‘sweets cheats’ recipes. Just click on the name of the recipe and it will take you directly to the post. :) Baked Chocolate Peanut Butter Cinnamon Bananas Game Day Tri-Apple “Nachos” Strawberry Honey Greek…
