It’s just so quick and needing to be at work at 8am just does not fit my favorable lifestyle. Turkey Sausage & Veggie Egg Scramble Breakfast Tacos!

Tacos are by far my favorite foods. I love Mexican food, and finding different ways to play around with the taco’s fillings, is really fun! This past morning, I made turkey sausage & veggie egg scramble tacos for Dj and I. They were super filling, low in calorie, low in fat, and full of protein!  You Need: 4 Large Eggs *2 Low-Fat Turkey Sausage Links *6 White Mushrooms *1 Small White Onion *1/3 Medium Zucchini *1/3 Medium Yellow Squash *1 Tablespoon Almond Milk *6 Corn Tortillas *Pepper (to taste)* Corn tortillas are a lot better for you than flour tortillas. Pumpkin Spice Soy Latte!

After a month of chaos, I am embracing this sudden down time. Within this past 3 ½ weeks, I’ve graduated from college, visited family abroad in London, surprised my dad out in California for his 50th birthday, made a quick stop in Philadelphia to celebrate Dj’s birthday, & then made the drive back to Morgantown! Guys…. I have one more paper due and then I am officially done with my undergraduate degree. I’m going to pause to take that in for a moment. Time has really flown! It’s also extremely overwhelming because I have no idea where I will be 1-2 months from now, but it’s extremely exciting at the same time. Dj had an interview in California for an aerospace engineering job this past week and is flying to Florida in a few days to take on another! Chocolate PB2 Banana Oatmeal with Raisins!

This week is going to be random and filled of short recipes, just for a warning! I’m in my last two weeks of school ever. Ever. EVER. (So bittersweet). So, with job applications, finals, and spending time with friends, these next few weeks will be hectic. Sorry in advance! :) This is one of my favorite go-to breakfasts or snacks. I love oatmeal because it is healthy and so filling. It will keep me going all morning long! Oatmeal is also very versatile. You can experiment with a lot of different flavors, such as one of my current favorites, Chocolate PB2 Banana Oatmeal with Raisins.
