Turkey Sausage & Veggie Egg Scramble Breakfast Tacos!

Tacos are by far my favorite foods. I love Mexican food, and finding different ways to play around with the taco’s fillings, is really fun!

This past morning, I made turkey sausage & veggie egg scramble tacos for Dj and I. They were super filling, low in calorie, low in fat, and full of protein! 

You Need:

4 Large Eggs *2 Low-Fat Turkey Sausage Links *6 White Mushrooms *1 Small White Onion *1/3 Medium Zucchini *1/3 Medium Yellow Squash *1 Tablespoon Almond Milk *6 Corn Tortillas *Pepper (to taste)*

Corn tortillas are a lot better for you than flour tortillas. They are lower in calories, fat, and have a very simple ingredient list. You can read more about the difference here!

In a large skillet, sauté the mushrooms, onion, zucchini, yellow squash, and turkey sausage with 1 tablespoon of EVOO on medium for about 10 minutes, or until they are all softened and lightly browned.

Next, mix the 4 large eggs with 1 tablespoon of almond milk, and poor mixture over veggie/sausage mix.

While the eggs are cooking, heat another burner on medium-low and place the corn tortillas straight on the burner. Wait until they begin to bubble a bit in the middle, and flip over, lightly browning them on both sides.

Lay the corn tortillas out on a plate, and spoon in 1/6 of the mixture into each tortilla.

I paired this with ¼ of an avocado, some fresh tomato slices,

chunky salsa, and low-fat plain greek yogurt. Plain greek yogurt tastes just like sour cream! Try it!
