Mini Cinnamon Peanut Butter Protein Pancake Stacks – Super Bowl Goodies Series
You might be sitting here thinking to yourself, “whaaaat, pancakes for Super Bowl food?” But stay with me here! If you think about it, the Super Bowl is an all day event. Last year, we had friends over to our place, and people were showing up around 10:30 in the morning, Budlight + corn hole boards in hand. This year, we’re heading over to my friend’s mom’s house to tons of food, a heated pool, and those same sets of corn hole boards.
Since it’s an all-day event, I get bored of snacking on the same foods throughout the day. These pancakes are the perfect solution because they’re made with Kodiak Cakes (I buy mine HERE), which is a very healthy brand that makes PROTEIN pancakes! Healthy pancakes that actually TASTE like pancakes? It’s going to be an ooooh yes from me!
Kodiak Cakes are a staple in my house. My boyfriend’s sister got me the cutest waffle iron for my birthday (did I just sound super old or what?) and so I make healthy pancakes + waffles pretty much every weekend. Following the same thought that the Super Bowl always falls on a Sunday, what is better than Sunday brunch? [hint: nothing. Well, except maybe this roasted veggie + brie sandwich I got on our Washington DC trip… but that’s ALL. 😉 ]
Since Kodiak Cakes are jam packed with 14g of protein per serving, it will keep you nice + full for awhile. Which is nice, if you’re not wanting to overeat too much in the beginning of the day to leave room for homemade spicy guac, or if you just need that boost of energy to win that game of corn hole.
Whatever you have planned for the day; even if you’re not a football fan, these pancakes make the cutest + tastiest addition to any weekend brunch of get together!

- 1 cup of Kodak Cake protein pancake mix
- 2 tablespoons of PB2 powder
- 1 tablespoon on ground cinnamon
- 1 cup water
- Mix all ingredients together
- Spoon 1 tablespoon of batter on griddle
- Stack pancakes in 3's + secure with a toothpick
- Serve pancakes immediately with pure maple syrup or fruit compote
