Low Calorie Pizza Cups – Super Bowl Goodies Series

"10-Recipes-to-Bring-to-your-Memorial-Day-Party"

Pizza is hands down my favorite food + biggest weakness.  I've found ways to make this dish lighter, like this roasted veggie flatbread pizza and even a skinny breakfast (!!) pizza, so I thought using similar "flatbread" material would allow for a lower calorie + lower carb Super Bowl treat while still having that staple pizza flavor. I love recipes that are customizable to specific taste buds + also those with a smaller ingredient list, and this low carb recipe falls in to both categories! By using tortillas, they give that crunch of a crispy pizza, but at a fraction of the calories! That's a win/win in my book. :) These pizza cups take only about 20 minutes to make, so they are perfect for a quick dish…

Baked Cauliflower Wings – Super Bowl Goodies Series

"10-Recipes-to-Bring-to-your-Memorial-Day-Party"

Ever since becoming a vegetarian, I've taken to the task of finding delicious alternatives to classic favorites, but these baked cauliflower wings just may take the cake. Since these "wings" are made from baked cauliflower, they take on a similar texture as chicken wings, but at only a quarter of the calories + fat. When I ran a test trial of these recipes, one of my friends + a huge chicken wing lover, asked for the recipe. It would be the perfect addition to a weekday meal prep, a snack to keep on hand, or, in this case, a great dish to bring along to a party [like the Super Bowl ;) ]. One of the best parts of this recipe is just how versatile it is. I made 4 flavors: bbq, sweet chili,…

Mini Cinnamon Peanut Butter Protein Pancake Stacks – Super Bowl Goodies Series

Cinnamon Peanut Butter Protein Pancake

You might be sitting here thinking to yourself, "whaaaat, pancakes for Super Bowl food?" But stay with me here! If you think about it, the Super Bowl is an all day event. Last year, we had friends over to our place, and people were showing up around 10:30 in the morning, Budlight + corn hole boards in hand. This year, we're heading over to my friend's mom's house to tons of food, a heated pool, and those same sets of corn hole boards. Since it's an all-day event, I get bored of snacking on the same foods throughout the day. These pancakes are the perfect solution because they're made with Kodiak Cakes (I buy mine HERE), which is a very healthy brand that makes PROTEIN pancakes! Healthy pancakes that actually…

Super Bowl Party Food Ideas

This year, I'm doing 7 Days of Super Bowl Goodies! That means a new post will be hitting this blog starting Saturday, January 28th - Saturday, February 4th. It's sort of like the 25 Days of Christmas on ABC Family Freeform, but a little better because FOOD. And better yet, Super Bowl party food! Which is the best kind of food there is. (Minus you of course,  the best banana bread muffins ever). As a precursor, since all of these recipes will be coming to you bright and early on the said day, I've compiled a list of some of my #BlastFromThePast recipes that would also be pretty great crowd pleasers for the Super Bowl! So, I want to know, do you care about who wins the…

Asian Veggie Spring Rolls with Homemade Sweet + Spicy Peanut Sauce

"10-Recipes-to-Bring-to-your-Memorial-Day-Party"

If I had to choose one food group to live on forever, I think Asian cuisine would win the battle. In an attempt to eat out less, I've been trying to make some of my classic favorite dishes at home (hello, talking about you, skinny teriyaki 'fried' rice), and these Asian inspired veggie spring rolls with a homemade sweet + spicy peanut sauce were my most recent battle. I'm not sure why, but making my own spring rolls always seemed extremely intimidating. I'm not going to lie, the first time trying to figure out the rice paper was a total flop, but utilizing a non-stick wood serving tray as my rolling table actually ended up being my best friend. After I…

Coconut Walnut Cherry Crunch Smoothie Bowl

Coconut Walnut Cherry Crunch Smoothie Bowl || These smoothie bowls are the perfect vegan breakfast, snack, or even meal option! It's light, easy to make, and customizable to what you're wanting to fuel your body with that moment! My family LOVES them!

I have a very love/hate relationship with smoothies (except for these skinny very berry smoothies, because they are super tasty). Or rather, cold foods in general. I tend to go through fazes where I'm really about them, or really against them. There is not in between, but this month, I've been on a total smoothie kick. They're really just looking at me taunting me with a "we're backkkkk" but I'm loving it. Further more, I've expanded my renounced love for smoothies by creating smoothie bowls lately. [Do you guys remember my recent post about chocolate covered cherry + banana smoothie bowls?] Well, apparently they only keep getting better! Or at least I've found the flavor combos are pretty much limitless and SO versatile. They're kind of like my no-bake protein bites. I started off…

Chocolate Cherry Banana Smoothie Bowl

Chocolate Covered Cherry + Banana Smoothie Bowls | These vegan, easy to make smoothie bowls are packed with healthy nutrients, fats, and keep you fueled with natural proteins & ingredients

I've been a tad obsessed with smoothie bowls lately. If you've never had a smoothie bowl before, they're exactly what they sound like! I always use frozen bananas as my base, add in any other frozen fruits I'm feeling, then get crazy with some toppings. :) The other day, Dj and I got home pretty late, so I didn't want to eat anything too heavy for dinner. I decided to play around with a new combo for a smoothie bowl and it was AMAZING. Luckily, I thought to snap a picture before digging in, so while this post doesn't have as many step by step pictures as my posts usually do, I can still share it! 1-2 frozen bananas 1/2 - 1 cup of frozen cherries 1 tablespoon cocoa powder 1/4 cup unsweetened vanilla…
