What I Ate on Wednesday; vol. 2

One question I’m frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day. From the post, Avocado English Muffins; Healthy & Simple Breakfast Ideas As an easier guide besides "check out some breakfast and lunch ideas on my blog!", composing a post that gives an exact depiction of what I eat from the time I wake up to the time I go to sleep seemed a lot easier. [If you missed What I Ate on Wednesday; vol. 1, check it out here!] So, lets get to it! Breakfast:  During the week, I like the keep breakfast simple. I always drink a glass of water in the mornings as I am getting ready, but…

Feel Good Friday; vol. 16

"postive-quotes-on-life"

Has it really been over 4 months since my latest Feel Good Friday? It's funny how time can get away from us from time-to-time, but I'm happy to be back this week with a dose of positivity to get you through your final workday before this weekend. This weekend will be jammed packed with activities for me! My friend, Brian, has some friends coming into town and then I'm hosting a Super Bowl party! Are you rooting for anyone? I'm not, I'm just in it for the sangria this year. ;) Here's what I've been reading this week! Eating a vegan, plant-based diet is growing in popularity. To ease into it, many start implementing 1 meal per day on this plan. Here is a week’s worth of meal ideas for $30! An interesting take…

What’s on My Nightstand; vol. 3

"Good-Young-Adult-Books-To-Read"

When it comes to my nighttime routine, I'm trying my best to incorporate reading back into my schedule. Everyone has a goal list; mine covers an array of physical bucket list items, to smaller goals that focus on personal growth. For me, when I set aside time to read, I feel much more relaxed throughout the days. I'm not sure why exactly, but I've always found reading to be relaxing, enriching, and something that connects me to new thoughts I hadn't had beforehand. I like to put myself in the story as the character, ditch my everyday life for a little while, and focus on a life of another; either fictional or real. Reading, unfortunately, is one of those enjoyable activities of mine that seem to be the first to be forgotten about. I'll…

Snow Day Survival Guide

"West-Virginia-University"

When it comes to snow days, I’m a self-proclaimed pro. Living in the mountains of West Virginia for almost 6 years taught me a thing or two about how to battle snow and wind so cold you can feel it in your bones. West Virginia University during the beginning of snow storm, Sandy *hint: it’s all about staying inside. ;) When I was in college, I was all about the snow. I would go snowboarding with my friend, Katie, after chemistry class every Thursday night, we would walk across the dead roads to Eat n' Park for some late night grilled stickies (like a cinnamon roll, but with honey- omg), stay in all day drinking adult beverages while I dominated in Mario Kart & Mario Party... once we even thought up the brilliant idea…

10 Things I’ve Learned Since Turning 25

"Jacksonville-Beach-Florida"

So, last week I turned 25 years old. A quarter of a century... 25 years... insanity. Apparently, when you turn 25 years old, people start considering you a "grown up" and "able to make her own decisions in life", including daunting tasks, such as making dentist appointments. Side note: I have still yet to do this... sorry, mom. Even though I don't feel as though I'm old enough to actually make my own health decisions and keep myself alive, I thought I'd share some insights I've had since coming to the realization that I'm officially a quarter. (century, that is) 10 Things I've Learned Since Turning 25 1. It's okay to not to be settled into a relationship by now. My single friends (hiii, guys!) are divided into 2 distinct groups: those who are…

Make Ahead Breakfast Parfaits

Make Ahead Breakfast Parfaits

When it comes to my morning routine, I'm all about convenience and quickness. By the time I actually convince myself to get out of bed during the week, I try to be out of the door in under 30 minutes. It helps that I don't like to eat first thing in the mornings, so being able to grab something on my way out the door to eat once I get to work is key. I'm a big fan of both cottage cheese (in breakfast form, as well as in lunch/dinner form), as well as utilizing Greek yogurt in a number of ways. Being that I don't like to eat the same thing each and every day, I decided to add two variations of these cute Mason jar parfaits so I have an option which…

Vodka Ginger Fizz

Vodka Ginger Fizz

Happy 2016! I can't wait to share with you my holiday recap post; we hit 9 states (some multiple times) in 13 days! Our first stop was my mom's place in North Carolina. She lives right on the water, which makes up for how tiny the town is. I'm used to living in large cities so don't know what to do with myself when I'm not surrounded by constant activity options, but it does allow us to have a lot of family time, which is nice since she's just been back in America for about a year. We like to make drinks, play games, watch movies, and catch up on life. We're all a huge fan of ginger so when I saw my mom had a new ginger liqueur, I was excited to play around…

Bruschetta Quesadilla – [Trader Joe’s ingredients]

Balsamic Brushetta Quesadilla

Bruschetta is a favorite, easy, go-to of mine. If I'm ever needing a quick snack, an easy dinner, or just am craving something saucy [literally every day..] then brushetta is many times on the menu. A Trader Joe's recently came to Jacksonville [thank you, Goddddd!] and I have been hooked ever since. My parents used to grocery shop at Trader Joe's when I was growing up, so I've been a fan pretty much forever. When I was in college, WVU didn't have a Traders, so I was jumping for joy when one came to Florida shortly after we moved here. There are many ways to utilize bruchetta, my favorites include: On a toasted baguette Baked with chicken Baked with veggies On crackers As you may know, Dj and I have been moving for the…
