Open Faced Turkey, Guacamole, Steamed Egg Sandwich!

Guys…. I have one more paper due and then I am officially done with my undergraduate degree. I’m going to pause to take that in for a moment.

Time has really flown! It’s also extremely overwhelming because I have no idea where I will be 1-2 months from now, but it’s extremely exciting at the same time. Dj had an interview in California for an aerospace engineering job this past week and is flying to Florida in a few days to take on another! Exciting times for all of us. 🙂

Anyways, I want to apologize again for the lack of activity lately! Since it is finals week, my life consisted of coffee, coffee, and more coffee. 😉 Not much to blog about there! Except the fact that Starbucks has those adorable red cups back, so we can obsess about them for a moment.

Currently sipping on a non-fat gingerbread latte to celebrate the end of my degree- woohoo!

Okay! Now let’s get to the real reason of this post! A food creation, that I can only assume they eat in heaven, has become my latest go-to meal. I’m a big sandwich lover and mixing around different ingredients can be fun! This recipe is so simple, filling, and healthy that it will become an instant favorite!

You Need:

*2 pieces of Whole Wheat toast (I use Sara Lee’s 45 calorie bread) *2 Tablespoons Guacamole *Turkey Breast (or any thin lunch meat) *Raw Spinach *2 Medium Steamed Eggs *Cut up Roma Tomato *Ground Black Pepper (to taste)*

Simply toast the bread, spread on the guacamole, top with turkey & spinach, place on top a hot steamed egg, fresh tomatoes, and ground pepper!  So simple!

I promise now that the semester is coming to a close I will be better at posting up-to-date recipes! 🙂
