When the weather starts to heat up, you can always find a batch of these homemade Hazelnut Vanilla Coffee Pops in my freezer. Starting off my mornings with oatmeal has become my latest obsession. For one, it’s warm and comforting, and it also comes jammed packed with health benefits. Being low in saturated fats, high in fiber to keep you full, and oats are also extremely versatile to work with! I’m feeling a little under the weather, so took today off from work, and needed something warm for my throat. Besides tea, oatmeal is another great comfort food for when you’re feeling sick. Did this week go by extremely slow for anyone else? I am so excited for the weekend! I don’t even have anything special planned.. which I’m actually really happy about for once. I recently joined a gym to see if that helps motivate me (so far, mixed results). They do offer unlimited classes, though, so I’m going to try to make it to spin at 9am Sunday morning. I had a hard time naming these little bites. My sister calls them “cookies” (nope, texture is completely off), my friend, Tyler, calls them “healthy muffin topish things” (closer but that would be one handful of a name), and my friend Sam’s boyfriend, Brian, called them “really good” (I agree with him the most). So, with minimal help and even less creative-juices in my brain, Power Pods will have to do for now. ;) I’ve played around with a similar recipe with muffins before, but my sister, Jaclyn, mentioned that she tried them as “cookies” and they worked out really well. Baked Caramelized Grapefruit

Grapefruit is pretty much a magic fruit. It’s full of vitamin C, aid in natural weight loss, and even help keep you from getting sick! It’s also one of those fruits where you either love it or hate it. Most people don’t like it because it can be extremely tart- however, if you bake it, it will naturally caramelize and become almost dessert-like! Which is exactly what I did here. What you need: One medium/large grapefruit 2 tablespoons pure honey 2 tablespoons ground cinnamon Slice the grapefruit in half & place it half up in a deep pan with about an inch of water. Drizzle 1 tablespoon of pure honey on each side of the grapefruit & then top with the cinnamon. Place in an oven at 375 degrees for about 30 minutes. You’ll…
