Buffalo Chicken Dip- a tailgating must have!
It’s almost time for the Super Bowl! Woooo! Even though I don’t care for either team, and my (poor, awful) Redskins didn’t make it in, I’m still excited for it.
Every year, I make a ton of food and have a bunch of people over. Super Bowl’s are a staple social event, so preparing what recipes you’ll be making beforehand is definitely necessary!
If you’ve been following for awhile, you know that I lived in West Virginia for the past 5 years until moving down to Florida last February. One thing you will find at any party, tailgating, or just general event in WV is buffalo chicken dip. Seriously, I had it at a wedding once.
While buffalo chicken dip isn’t the healthiest, it is definitely the tastiest. It’s a crowd favorite and I’ve been asked for my recipe at least 38 times. So, if you’re looking for an easy potluck dish to either make or bring along with you somewhere, you can end your search here. 😉
You’ll need: (makes 1 circle pan or one 8×12)
- About 2 cups of cooked chicken. [I prefer to cook about 2-3 large breasts of chicken myself for this recipe, but if you’re in a hurry, use 2 large cans of the chicken you find next to the tuna at the grocery store]
- 1 block of softened cream cheese
- 1 cup of ranch or blue cheese; whichever you prefer
- ¾ cup Frank’s Red Hot sauce
- 1 ¾ cup shredded cheddar cheese
Once your chicken is cooked, shred it all up!
Mix the chicken, softened cream cheese, ranch or blue cheese. hot sauce, and 1 cup of cheddar cheese in an oven baking dish (no need to grease it).
Bake in the oven at 350 degrees for about 20-25 minutes. You want it to begin to bubble around the edges.
Once it has started to bubble, top with the remaining ¾ cup of shredded cheddar cheese and pop it back in the oven until the cheese is fully melted and has started to bubble [about 10 more minutes].
Serve with celery or tortilla chips while hot!
*If you’re bringing this along to a party, you’re able to serve it beforehand, and then top with cheese once you get to the home. You want to cook it while it’s hot out of the oven for it to taste the best!*
