Skinny Crispy Sodium-Free French Fries!

First of all, I want to thank Taralynn for showcasing me in her new blog! Taralynn is a big inspiration to me, so I was glowing for days! 🙂

This past week was consumed of packing, driving, more packing, coffee, more driving, unpacking, caffeine overloads, and seeing about 7 states in a matter of 16 hours. However, I have officially made it to Jacksonville, Florida!! My new home.

Once I left, Morgantown was pounded with another foot of snow, and I was down here, sweating in 80 degree weather. Its been a crazy, surreal change, but I am embracing this new adventure and chapter in my life!

Dj starts his job this coming Monday, so I will have ample time to get this apartment put together while searching for jobs down here in Jacksonville!

I am very used to traveling. One thing I really miss when traveling is my kitchen. I haven’t been able to cook a meal in weeks! It has been torture. My body hates it as well!

However, that all changed last night. 🙂 After our first trip to the grocery store, we decided to cap our first night with some jalapeño turkey burgers.

One thing I really love with burgers is french fries. I think if I ate a burger, and did not have a few fries to snack on, I would feel as though the meal is incomplete. SO I made some skinny fries to pair with the turkey burgers to keep the meal clean and healthy!

You Need:

*2 ½ Medium Potatoes *2 Tablespoons Extra Virgin Olive Oil *Salt-Free Seasonings (garlic, pepper, red pepper flakes, onion) *1 Tablespoon Coconut Oil*

I used 2 ½ medium potatoes. It was more than enough, and we had plenty left overs! A good rule of thumb is about ½ – ¾ of a potato per person. I made more for left overs, plus Dj can eat a lot!

After washing your potatoes, slice them into thick chunks. I left the skin on the potatoes.

Once sliced, Place in a flat pan, making sure that all of the fries are able to lay in a single layer.

Toss in 1-2 tablespoons of extra virgin olive oil and salt-free seasonings! I used garlic, black pepper, onion, and chili flakes.

Place in oven at 350 for about 25 minutes, or until they begin to brown.

Once they have begun to brown on the outside, remove from the oven. Heat a skillet on medium high with 1 tablespoon of coconut oil.

Place your brown fries in the hot skillet, and gently stir the fries around, until they begin to crisp up. (About 2-3 minutes)

For 1/3 of french fries: 183 calories
