Make Your Own Burrito Bowls!

Remember a few months ago when I posted this recipe about Healthy Salsa Shredded Chicken?
Well, I put that recipe to use in a different way the other night. That recipe makes a ton of shredded chicken, so you’ll have plenty of leftovers. This is one of those recipes that just has leftovers calling your name!
You Need:
*1 Green Bell Pepper *1 White Onion *Shredded Chicken *Raw Spinach *Lettuce *Brown Rice *Salsa *Low-fat Plain Greek Yogurt *Guacamole *Shredded Cheese*
*This is really just opinion based. You can throw whatever you like in there! This would be amazing with corn and black beans, for example.
Slice up your onion and pepper into thin strips and put in a sauté pan with a bit of olive oil, pepper, and cayenne pepper.
Cook on medium low for about 15 minutes. You want them softened, but still a little crunchy.
I decided to compose this buffet style, so we could both choose how little or how much we wanted of each ingredient.
In a large bowl, mix fresh lettuce with fresh spinach.
I chose lettuce for the crunch, and spinach added since it’s just so good for you.
I’ve stated many times that plain greek yogurt tastes just like sour cream. Trust me! 🙂 It adds protein and healthy fats.
In separate bowls, I put the Plain Greek Yogurt, Cheese, Cooked Brown Rice, and Chunky Salsa. I left the guacamole in its container.
Once the peppers and onions are done, I just put the pan as it was on a pot holder on the table to keep them warm.
Same for the Shredded Chicken! 🙂
Then me and Dj had to pose for a mirror picture, haha.
