Light Shredded Chicken Tacos with Seasoned Sweet Potato Crisps
Having all my friends over to eat and catch up is one of my favorite evenings. Tacos are an easy crowd pleaser, so now that everyone is back in town after the holidays, I invited some of my friends over for a healthy, tasty taco night!
I hadn’t made crockpot shredded chicken before, but this recipe is a keeper for sure! Dj and his best friend, Brennan, ate at least 6 soft tacos each… they kept saying, “I’m so full, but these are SO GOOD! I can’t stop!” So, I have moved this recipe in my ‘keep’ box for the future. 🙂
This recipe is also really simple. It only takes 3 ingredients! Yes, you heard correctly, 3!
*6 Boneless Skinless Chicken Breasts, 1 Jar of Salsa *1 Package of Low Sodium Taco Seasoning*
If you’re making them into tacos, you will also need tortillas and your choice of fillings. The shredded chicken would also be great for salads, sandwiches- you name it!
I love my crockpot so much! It makes any recipe a no hassle recipe.. and that’s a great thing in my book. 🙂
Simply add the chicken, salsa, and taco seasoning into the crockpot. You do not need any water or anything for the seasoning.
Stir it all up and cover. Cook on low for 6-8 hours or on high for 4-6 hours. I cooked mine on low for 7 hours and it was so tender and perfect.
After the chicken is cooked, take two forks and shred it. The chicken will absorb any excess liquid once it is all shred up.
To go along with these tacos, I took the idea of adding Sweet Potato Crisps with them from Taralynn. I had never added sweet potatoes to tacos before, but it really made a difference! They were so good!
To make them, I sliced a large sweet potato up very thin, drizzled some extra virgin olive oil on top, then seasoned with garlic powder and italian seasoning. Then, I cooked them in the oven at 350 degrees for 25 minutes.
I like to lay everything out buffet style, so that everyone can take what they want!
I had in my line up:
*Fresh tomatoes *Raw onion *Iceberg lettuce *Sour cream (and Plain Chobani Greek Yogurt) *Hot sauces *Salsa *Tortillas *Cheddar cheese *Jalapeños *Sweet Potatoes*
Not pictured, but on the stove:
*No Salt Added Corn *Black Beans *Brown Rice*
What do you like on your tacos?
Enjoy the rest of your week! Xo
