Hawaiian Grilled Shrimp Stir Fry

Ah, day two (out of 10) of my #dinnerforone segment. I have this gigantic fresh, amazingly ripe pineapple right now. I’ve been eating off it for a few days now, but being home alone, I still have a lot to go! I’ve been putting in on yogurt, in smoothies, and eating it plain with a bit of honey (oh-my-thank-you-tastebuds-god). I looked in the pantry and saw that I had this Hawaiian marinade. Boom. Gluten-Free, Healthy, 3 Minute Mug “Pancakes”!

I finally tried aubernutter’s Mug Pancake recipe! She’s one of my all time favorite Tumblrs, and these “Pancakes” made me even love her more! These are also super easy, versatile, and insanely filling. Lately, I’ve been making these in the mornings and bringing them to work. You Need: *1 Banana *1 Egg *1 Cup Oatmeal (any kind) *Unsweetened Applesauce *Cinnamon *1 Packet of Truvia *Chia Seeds* *if you don’t have Applesauce, you can sub it out with Greek Yogurt or Cottage Cheese! *The cinnamon, Truvia, and chia seeds are all optional! You can also add anything to make your own spin on these. (Raisins, nuts, fruit- Whatever!) First, microwave your banana on a plate (or in the mug) for 30 second. Baked Chocolate Peanut Butter Cinnamon Bananas!

Let us take a moment to thank whoever invented the combination of peanut butter and chocolate. Plus banana. Plus honey. Plus Cinnamon. Okay, you get where I’m going with this. My sweets cravings have been having their own sweets cravings lately. It’s madness. The trick is to trick your body into thinking the cravings are winning, while still choosing foods that are good for you and wont kill your clean eating efforts! That is exactly what this little sliver of heaven does for me. You Need: *1 Banana *Raw Honey *Cinnamon *Natural Peanut Butter *Dark Chocolate Chips *Pecans (optional)* Preheat your oven to 210 degrees!! Slice your banana in half. SEE YA LATER, CHIPOTLE! :) Remember a few months ago when I posted this recipe about Healthy Salsa Shredded Chicken? Well, I put that recipe to use in a different way the other night. That recipe makes a ton of shredded chicken, so you’ll have plenty of leftovers. This is one of those recipes that just has leftovers calling your name! Healthy 3 Ingredient Strawberry Jam!

Any other avid F.R.I.E.N.D.S. lovers out there?! When it comes to jam, I side with Joey. ;) I love it! Especially paired with peanut butter. Yummmm jam and peanut butter. Making jam brings me back to my childhood with my Oma (aka “grandma” in German). She always had the freshest fruit and we would stand over her stove for hours boiling it down to create jars and jars of jam to last us forever. Seriously, forever. Sun Dried Tomato Grilled Chicken Salads! (& some very important visitors!)

Moving alone to Florida, we’ve had our moments of home-sickness, so having friends visit really has helped! Chocolate Covered Strawberry Oatmeal!

Guys. Chocolate Covered Strawberry Oatmeal was created the other day. And. It. Was. Glorious. I’ve been on a bit of an oatmeal kick lately. It’s just so quick and needing to be at work at 8am just does not fit my favorable lifestyle. (Aka, sleeping until 11am, drinking coffee while watching How I Met Your Mother, showering, finally deciding to become a real human around 1pm when it’s time for more food). So, oatmeal it is! It’s very quick to make, meaning I can hit the snooze button a few more times without skipping breakfast. (Which I’ve come to learn is a huge mistake!) In a bowl, cook quick oats the way you typically would. I prefer the microwave for 1 ½ minute method because, you know, I love sleep and quickness. But if…
