Teriyaki Chicken Stir Fry Bake

homemade teriyaki chicken stirfry bake

I've come to the conclusion recently that I choose foods based on sauces. Sauces are my biggest weakness, and honestly, the only reason I eat things, such as french fries, is because of how much I love ketchup/ranch/honey mustard/sweet chili sauce... I can go on and on. One of my favorite food growing up was teriyaki chicken rice bowls. Wanting to cut down on my carb/sauce in take, I decided to play around with a lighter spin on the classic favorite. I was a little apprehensive trying it as a bake, but lets be serious, when was cheese ever a bad idea? [hint: never] Here's what you need: 24 oz chicken (either 6 small chicken breasts or 3 extra large ones) 4 packed cups of raw mixed veggies [I used cauliflower, broccoli, onion, red bell pepper,…

What I Ate on Wednesday; vol. 1

"travel money saving tips"

One question I'm frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day. One series I began is my Instagram Round Up (catch up on series 1 & series 2!) but I thought if I did a simple "What I Ate on Wednesday" series, that would help to see what I ate from start to finish that day to give you some ideas. So, lets get to it! Breakfast: Breakfasts are simple and quick for me! I stick with a few different options (oatmeal, fruit, smoothies, cottage cheese, or eggs) This past Wednesday, I ate 1 cup of low-fat cottage cheese, 1 medium sliced up apple, and drizzled it with some local honey…

Skinny Classic Chili

Skinny Chili

I'm one of those people that believes soup & winter foods can be eaten at any point of the year. Especially when it is something as tasty & comforting as chili. Chili brings me right back to when I was a student at West Virginia and my roommates and I would make a big batch and eat on it throughout the week. [We would flip between classic chili & this equally tasty Zesty Fiesta Soup!] WVU still brings up so many feelings of nostalgia for me that the best way to help with the homesick feeling is to bring back tastes of home. Of course, the fact that chili is ridiculously tasty helps a lot, too. Classic chili isn't that bad for you, but I like to keep challenging myself to find ways to…

Sweet & Spicy Italian Chicken Stuffed Squash

Have you ever had one of those nights where you just have no idea what to make for dinner so you just stare helplessly in the fridge? That was me last night, but something amazing came out of it! I really love making stuffed foods. Ground Turkey Stuffed Peppers? Yes! Cheesecake Stuffed Gingerbread Cookies? Why not! For one, they're generally healthier. By adding the filling to peppers, tomatoes, or squash, you omit the complex carb element. Not to mention the various veggies add a pop of flavor- these Sweet & Spicy Italian Chicken Stuffed Squashes really hit the spot. What you'll need: 6 medium yellow squash 1 cup white onion 1 medium tomato 1/2 de-seeded jalapeno 2 large handfuls of spinach 4 hot Italian chicken sausage burgers (or 1 lb of your choice of…

Fresh Balsamic Peach Salsa [With a Kick!]

The middle of summer is good for a lot of things. Pools, BBQs, beach vacays, longer days... I could go on and on; summer, I am definitely a fan of you! One thing that I love in the summer time is fresh peaches. Sure, I can eat a peach in the winter and be content, but there is something just so magical about a peach in the summer. They're in season, for one, and you can wash the juice off your face by jumping in a pool! Last night, I was craving shrimp. [surprise surprise, right ;) ?] When looking through my past farmers market haul, I saw that I still had 4 ripe peaches I needed to use up. I decided on Grilled Teriyaki Shrimp & Peach Kabobs (recipe coming soon) topped with…

Lemon Garlic Shrimp Kabobs

Now that the mid 90's have made themselves comfortable and oh so welcomed, I'm officially in full summer mode. One of my favorite summer food preps is to keep marinated, raw shrimp in my fridge. Shrimp is just one of those staple go-to's that you can't beat. Not only is it versatile in flavors, healthy, and tasty, but it also cooks in 3-5 minutes. (yes, please) In a Tupperware container (I like to keep it fancy), I combined: 1 pound raw shrimp (deveined // without the tails // cleaned) 2 tablespoons EVOO 2 tablespoons minced garlic 1/2 squeezed lemon Onion powder & cayenne pepper (to taste) After 2-3 days, I patted myself on the back for being so patient & keeping them in there as long as I did, skewered them onto some kabob sticks…

Prepared for Warmer Weather: Drinks & Salads

When the weather begins to heat up, my food & drink preferences change. I no longer crave cooler weather comfort foods like soup or heartier meals, such as chili (even though it's delish). I begin to migrate towards salads, smoothies, iced coffee, cold wraps, hummus inspired dishes, lighter choices for everyday snacking, and plenty of fruits in different varieties! [My clothing choice also begins to lighten up. ;) ] The other day, it was 86 degrees & there was not a cloud in the sky. We went to one of my all time favorite Happy Hour spots, M Shack. I ordered the [above] drink which was a Green Tea Mojito. I love green tea, and I love mojitos, but together? That apprehensive curiosity quickly turned into die-hard love after one sip. This drink…

Turkey & Veggie Spaghetti Squash; Food Prep

Food prepping on Sunday's has quickly turned into a weekly tradition of mine. When working full time and trying to stay social, it's easy to fall behind in your healthy food goals. By making a few go-to meal options that you can easily grab throughout the week, it really helps me stay on track, and also save some money! A few weeks ago, I made Ground Turkey & Veggie Spaghetti Squash for lunch options throughout the week. I've been trying to cut down on my carb intake, and spaghetti squash is such an easy & tasty way to do so! You'll Need: 1 large spaghetti squash 1 lb ground turkey (chicken or beef would also work) 1 large green bell pepper 1 large yellow onion A handful of cherry tomatoes 3 large handfuls of…
