I think one big misconception about eating a healthy diet is that there is so much prep and time that goes into it. In reality, I'm always finding ways to whip up meals and snacks that take less than 10 minutes.  The key is to keep certain staples around your house that are prepped beforehand. I like to meal prep one day during the week (usually Sunday nights or Monday nights) basic foods that I know can work in various recipes. These generally include: Brown rice Hard boiled eggs Soft boiled eggs Baked veggies Brown rice pasta or whole wheat pasta Spaghetti squash Tofu (or chicken, shrimp, ground turkey, or any other lean protein) Then, when the day comes, I can mix and match what I want to eat. I have officially found my newest favorite snack. Although, these are more of a supplemental meal of sorts. They are packed with dense nutrition- a full serving of fruit, protein, as well as a healthy fat. My biggest downfall when it comes to nutritional health will always be my sweet tooth. For my last meal, I'd probably choose a 1/2 baked, warm chocolate chip cookie... or the center of a Cinnabon.. or a warm brownie... you get the gist. ;) I've found ways to curb my sweet tooth with healthy alternatives, like these peanut butter brownies, balsamic baked berries, PB&J thumb print cookies, chocolate blueberry cupcakes with a whipped peanut butter frosting, and this baked chocolate peanut butter banana, but these seriously take the cake. One of my favorite ways to cook is to take classic comfort foods and try to make them healthy. Sometimes they don't always work out, but then there's times like this (or that time) where the recipe comes out and you can't believe that it's healthy and you probably won't ever go back to the take out version. I'm sorry I've been so MIA lately! I've been in the process of revamping my blog & had some personal changes happen lately in my life that my blog has taken a backseat. When I was younger, one thing I would look forward to is driving up to my grandparent's house in beautiful Oregon. I would still love that, but being located in Florida just makes the drive a tad longer than from California ;) My grandma is hands down the best baker. She makes everything from scratch- including my all time favorite thing- PIE! I always knew that going to grandma & grandpa's house meant pie every night, which is every child's dream! Light Cheesy Shrimp Pasta – 21 Day Fix Approved

I'm a week into the 21 day fix! So far, it's going pretty well. The workouts are tough but 30 minutes is definitely manageable. The thing I miss the most is knowing I am *able to* say yes to things (does that make any sense?!) I'm used to going to happy hour & having a glass of wine or two, going to dinner and ordering what I felt at the moment, or joining in on a BBQ and not needing to pack my own separate grilling necessities. That being said, I understand that 21 days is not forever- it's actually under a month.
