The other night, I went to the gym after work, came home starving, and stared blankly into the fridge. I’m trying not to waste any food, so that means I’ve been grocery shopping less so that I don’t end up throwing out food. This was one of those times where I was in between grocery hauls and had minimal dinner options, so I had to improvise. I had thawed ground turkey, a few veggies, and that was about it. Hawaiian Grilled Shrimp Stir Fry

Ah, day two (out of 10) of my #dinnerforone segment. I have this gigantic fresh, amazingly ripe pineapple right now. I’ve been eating off it for a few days now, but being home alone, I still have a lot to go! I’ve been putting in on yogurt, in smoothies, and eating it plain with a bit of honey (oh-my-thank-you-tastebuds-god). I looked in the pantry and saw that I had this Hawaiian marinade. Boom. That recipe makes a ton of shredded chicken, so you’ll have plenty of leftovers. This is one of those recipes that just has leftovers calling your name!
