What I Ate on Wednesday; vol. 2

One question I’m frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day.

As an easier guide besides “check out some breakfast and lunch ideas on my blog!”, composing a post that gives an exact depiction of what I eat from the time I wake up to the time I go to sleep seemed a lot easier.

So, lets get to it!



Breakfast:

 During the week, I like the keep breakfast simple. I always drink a glass of water in the mornings as I am getting ready, but save eating until I actually get to the office.

Due to that, I have a few staples: oatmeal (chocolate peanut butter cup oatmeal!), hard boiled eggs, cottage cheese with fruit, or yogurt and granola.

My favorite granola at the moment is Bear Naked; one with minimal ingredients and hardly processed! I pair a handful of this with Vanilla Non-fat Greek Yogurt and some fresh blueberries.

Lunch:

Typically, I bring my lunch to work, but occasionally, we’ll grab something to get out of the office for a little while and have work meetings. If we don’t go out to eat, I’ll usually bring left overs from the night before. My absolute favorites for the next day is either this Stir Fry Teriyaki Chicken Bake , some Light Cheesy Shrimp Pasta, or, since it’s been so cold recently, this Skinny Classic Chili.

This past Wednesday, we went to Jason’s Deli and I opted for their salad bar. My salad had: a mix of field greens, spinach, romaine, hard boiled eggs, cherry tomatoes, red onion, raw zucchini, peas, beats, and some croutons. I always switch up my choice of salad dressing, but I went with a light honey mustard this day.

Afternoon Pick Me Up:

Before heading back, I knew I’d need an afternoon pick me up. While this isn’t my typical go-to order at Starbucks [aka the best coffee order ever], I decided to switch it up.

Here we have a Venti Strawberry Acai Refresher & their new cookie dough cake pop! I have a pretty big sweet tooth, and these little treats are the perfect way to curb that. I really liked this drink; if I am ordering a refresher, I typically go with the Cool Lime, but this one was a nice change up.

Their refreshers are a great way to get caffeine if you’re not wanting coffee at the moment. They are made with green tea coffee extract, so they actually have just as much caffeine in them as a cup of joe does!

Dinner:

Lately, I’ve been trying to incorporate more of a vegetarian diet, which is why I didn’t eat any meat meals today. For dinner, I wanted to keep it light, so I sauteed green beans with spinach, mushrooms, and balsamic vinegar & sesame seeds. I also had raw spinach, tomatoes, tzatziki sauce, and cut up falafel.

While this isn’t the fanciest of dinners, and actually took me about 10 minutes to complete, I guess that’s what this post is meant to show.

 After Dinner Sweet Tooth:

I always end my nights with a cup of hot tea and, you probably guessed it, something sweet. If I’ve made something, like these skinny peanut butter brownies, I’ll have one of those, a piece of dark chocolate, or a spoonful of almond butter. Wednesday night, I had a few of these!
