Simple & Healthy Banana Pancakes- only 3 ingredients!

Happy New Year!! I hope you all had an amazing end to 2014 and a great start to 2015! This year, I went to Charleston, South Carolina to celebrate with my beeeest friend, Amanda. We had such an amazing weekend exploring the city, going for dinner & drinks, and tons and tons of shopping.

After all that weekend fun following the overload of activity from the holidays, this sudden downtime is an unusual, but welcomed feeling. I was able to deep clean my entire apartment this week, stock up my fridge with healthy homemade options, and create some yummy new recipes- which brings me to this simple, but great breakfast fix.

Pancakes are a comfort food that I always find myself craving. (Especially if they have chocolate chips in them)! This recipe cuts out the guilt and is SO simple to make. I bet 99% of you even have all the ingredients on hand.

You Need:

  • 1 large banana
  • 2 medium eggs
  • Ground cinnamon

Yepppp, that is all! You’re able to top them with whatever you’d like; I looove mixing in blueberries or chocolate chips. This time, I topped them with olive oil infused butter, sugar free syrup, and blackberries!

You’ll want to make sure to fully mash up your banana so that there aren’t any large clumps. Then, mix in your eggs! Depending on how large your banana is will determine how many eggs you’ll need. Eye the batter so that it’s runny, but not too water-like. You want it to resemble the thickness of regular pancake batter.

Heat up a small frying pan or skillet on medium to medium-low heat. These pancakes are easy to burn, so you’ll want to keep a close eye on them. Remember to use cooking spray!

This recipe makes 3 medium-large sized pancakes. The one pictured above is the first & smallest it made. My pan was too hot and completely burnt the 3rd 🙁 you’ll want to watch out for that!
