Tossed Tomato Spinach Salad; Simple Sides

Can anyone else believe it’s already over a week into December..? Time has been flying by recently, and I haven’t even finished fully putting up my Christmas decorations! I feel like these days I need a body double.

This weekend one of my oldest friends is getting MARRIED!!! I am so excited- this is my first friend to tie the knot and I was asked to be her Maid of Honor! I’m thrilled. 🙂 Anddddd, if you have been following for awhile, you know that I grew up in Southern California. Her wedding is in San Diego, so Dj and I are flying out for a quick, but oh so sweet, long weekend. I also get to see my dad & his side of the family so it will be a much needed getaway!

Before heading out, I am on a mission to use up all the produce I have in my fridge and thought I’d share an easy, but yummy favorite of mine.

You can eat this salad as a side, a snack, or even top it with some protein and make it a meal! It is super quick, healthy, and realllly good.

I’ve even brought this along to potlucks before. My friend, Lauren, would have a group of us over during the World Cup and I brought this along to share. It’s nice to have healthy options to balance out the bad when at parties.

All you need:

  1. Raw Spinach
  2. Fresh Tomatoes
  3. Ground Pepper
  4. Sun Dried Tomato Vinaigrette (Balsamic, Italian, & Catalina are also amazing with this)

Cut your tomatoes in thick chunks.

Place your tomatoes into a large bowl. Mix in ½ cup of the vinaigrette of your choice.

Add plenty of handfuls of spinach and stir it all up! Top with pepper to taste.

Cover and chill in the fridge until you are ready to serve! This tastes best if you serve it shortly after making it.
