Orzo & Veggie Bowl: Easy Dinner Idea

Whole Foods Plant Based DietLast night Dj & I watched the documentary, Forks Over Knives. It’s a look into our dietary health and how our diets as humans and nations has changed over time. It was SO interesting and I highly recommend checking it out if you’re interested in health and food.

The diet centers around more plant-based, whole foods, which I know is very important. They made the argument that if you do have meat in your diet, you should look at it more as a condiment rather than the focal point of your plate.

I decided to try out this lifestyle for a few days so I can make a more personal decision if this is something I would want to try and pursue.

Tonight, I made a quick meal that ended up being DELICIOUS. After sending a picture to my best friend, Sara, she asked me to blog it so that she can refer back to it later. So, sorry in advance for not having more images, but sometimes simple meals like this are the best and I don’t prep beforehand and am just pleasantly surprised. 🙂

This meal can easily incorporate chicken, shrimp, beans, or other veggies. It was simple, satisfying, very healthy, and extremely tasty!



What you need: [to make 4 servings]

  • 2 1/2 cups orzo
  • 1 can Rotel
  • 4 cups raw green beans
  • 1 medium white onion
  • 3 tablespoons minced garlic
  • 1 medium sweet potato
  • 1 tablespoon coconut oil
  • Balsamic vinegar – to taste
  • Black pepper & salt – to taste


What You Need to Do:

  1. In a large pot, cook your orzo & drain. Mix in the undrained can of Rotel.
  2. In a large pan, add your cleaned raw green beans, chopped onion, and garlic. Add 1 cup of water and steam until the beans & onion are nice and tender.
  3. Cube your sweet potato and add to a pan. Cook on medium high with 1 tablespoon of coconut oil, pepper, and salt until nice and tender.
  4. Divide the ingredients into 4 portions & add to a large bowl. Top balsamic vinegar & enjoy!
