Light Shepherd’s Pie

One thing I love to do is take staple comfort foods and substitute out ingredients to make it healthier, but keep the same “this must be so bad for you” taste.

I also love to cook big pans of food so that I can grab it for an easy lunch or dinner throughout the week!

This Light Shepherd’s Pie covered both of those bases. 🙂

[to make 9 servings]

  • Bag of small red potatoes
  • 2 cups of cauliflower
  • 1 bag of frozen carrots (about 2 cups)**
  • 1 bag of frozen corn (about 2 cups)**
  • 1 bag of frozen green beans (2 cups)**
  • 1 lb ground turkey, chicken, or beef. [I used chicken]
  • 3 wedges of Laughing Cow Garlic & Herb cheese
  • 2 tablespoons minced garlic
  • Garlic powder/ onion powder/ pepper/ red onion flakes

**You can also use fresh//raw

1.  Slice your potatoes into quarters for easy cooking. In a large pot, bring the potatoes to a boil. Once they’re about ½ way done, add the cauliflower to the pot & continue to cook until both are soft and tender.

2.  Drain & mash the potatoes & cauliflower together. Add the 3 wedges of Garlic & Herb Laughing Cow Cheese to the mash & stir until fully melted in!

3.  Steam your veggies! I used carrots, green beans, & corn!

4.  Brown your meat with 2 tablespoons of minced, raw garlic. Once cooked, mix in your desired seasonings. I used black pepper, red pepper flakes, onion powder, & garlic powder!

5.  In a large 9×13 pan, start to layer! I did a layer of the potato cauliflower mash, then the meat, followed by the steamed veggies, and finished with another topped layer of the mash.

6.  Bake at 375 degrees for about 30 minutes. You want the top layer of the mash to begin to brown.

7.  Serve up! This whole pan makes 6-9 servings. (I cut them into 6 originally but ate them as 9).

Per Serving [at 6 servings]: 343 calories
