Prepared for Warmer Weather: Drinks & Salads

When the weather begins to heat up, my food & drink preferences change. I no longer crave cooler weather comfort foods like soup or heartier meals, such as chili (even though it's delish). I begin to migrate towards salads, smoothies, iced coffee, cold wraps, hummus inspired dishes, lighter choices for everyday snacking, and plenty of fruits in different varieties! [My clothing choice also begins to lighten up. ;) ] The other day, it was 86 degrees & there was not a cloud in the sky. We went to one of my all time favorite Happy Hour spots, M Shack. I ordered the [above] drink which was a Green Tea Mojito. I love green tea, and I love mojitos, but together? That apprehensive curiosity quickly turned into die-hard love after one sip. This drink…

Hazelnut Vanilla Coffee Pops

Summer has [almost] officially arrived! When it comes to coffee, I'm a huge fan. Hot, iced, or in popsicle form- I'm all about it. When the weather starts to heat up, you can always find a batch of these homemade Hazelnut Vanilla Coffee Pops in my freezer. I play around a lot with the flavors of these; sometimes making them with plain black coffee, fun newly flavored coffees (blueberry muffin, anyone?), but these hazelnut vanilla ones are my staple go-to. Best part? They are SO easy to make. And consist of 3 ingredients! A tasty low cal treat using minimal ingredients & time? My kind of recipe! You Need: [to make 8 pops] 2 cups of coffee brewed- flavor of your choice. (I use hazelnut) 8 tablespoons of SO Delicious Coconut Milk Coffee Creamer. (I…

Fruit & Nutty Skinny Chicken Salad

Chicken salad has always been one of my all time favorite foods. It was my go-to order at Panera in high school and even followed me along to typical order in college. The one thing I don’t like about it is how secretly high calorie packed it is. I always though, meh, how bad can it be? It is mostly chicken, after all. Unfortunately, after realizing just how much mayo is involved, the disadvantages outweigh the advantages of this simple comfort food. However, (there is a light to the end of this somber fact!), this recipe counters ALL of that! It is my absolute favorite, boyfriend [highly] approved, and hopefully after trying it, you’ll feel the same! This recipe made 8 servings. 4 grilled (or baked) chicken breasts 1 cup sliced grapes (green, red,…

Everyday Eats & My Starbucks Order!

Starbucks will always have my heart. In high school, my brother worked as a barista and would always bring me back my favorite coffee order (venti iced chai or grande hot white chocolate mocha)! Since then, my order has changed up a bit after becoming more health conscious. (Not saying I never sneak in a white chocolate mocha or chocolate croissant from time to time..) My new favorite go-to is a Venti Iced Coffee with Coconut Milk & 6 Pumps Chai. I can never stray too far from my original love.. ;) Did you know that the iced coffee has the highest levels of caffeine on their entire menu? (Caffeine = life). PLUS, it only has 2 calories, so it’s a double win in my book! Did you also know that Starbucks now offers…

Weekend Update- Sushi & a Health Question

These upcoming weeks are going to be very interesting. Dj is in Japan for work, my friends are visiting their families for Easter, and I’m trying to figure out ways to keep myself busy. I’ve never been the best at being alone; I get bored EXTREMELY quickly. Take, for example, that it is only Saturday night & Dj and my friends have only been gone for about 30 hours and I’m already driving myself crazy. This morning, I made sure to sleep in, picked up a few things from the grocery store, went to the gym, got clean, watched Grey’s Anatomy, went to Joann Fabrics, picked up some food, and now I’m back to binge watching Grey’s. It’s been pretty stormy here, but I’m hoping it clears up, since everywhere will be closed tomorrow…

Chocolate Banana Blueberry Cupcakes with Lite Whipped Peanut Butter Icing || Skinny & Nutrient Packed !

Chocolate Banana Blueberry Cupcakes with Lite Whipped Peanut Butter Icing

I’ve talked many times about how big of a sweet tooth I have. The love I have for chocolate is crazy! If I could, I would eat extra chocolate chip, gooey cookies for breakfast, lunch, and dinner. (I just caught myself daydreaming there…) HOWEVER, when it comes to sweets, I’m all about modifications, not about limitations. If I tell myself I can’t have something, it’s all I will crave. So, to bypass that, I’ll find recipes that sub in some healthy ingredients for a less-guilt treat! And thus- these magical, yummy cupcakes were brought into my life. When I saw this post on Taralynn’s blog a few months ago, I pinned it to my “must try” recipe list. However, as most pins go, I forgot about it.. Until now :). With a few simple modifications…

Homemade Acai Berry Bowls

"Homemade-Acai-Berry-Bowls"

Weekends for us typically consist of eating out a lot. Wanting to give my bank account a break, I decided to challenge myself to use the weekends to try out new recipes I’ve been storing away and calculate just how much that ended up saving me! I live in Florida, but am originally from California. I have a ton of family out West & one of my brothers is constantly sending me snapchats of Banzai Bowls. I was immediately curious, so I took to Google to find out just how to make these bowls of this tasty power food. Since Acai Berry Bowls have not reached Florida (or I haven’t been able to find them anyway), I decided to try them out for myself. Acai berries are jammed packed of antioxidants and are a…

Chocolate Peanut Butter Cup Oatmeal

Starting off my mornings with oatmeal has become my latest obsession. For one, it’s warm and comforting, and it also comes jammed packed with health benefits. Being low in saturated fats, high in fiber to keep you full, and oats are also extremely versatile to work with! I’m feeling a little under the weather, so took today off from work, and needed something warm for my throat. Besides tea, oatmeal is another great comfort food for when you’re feeling sick. This oatmeal reminds me of my favvvorite candy, Reese’s, so if you’re also a chocolate & peanut butter fan, this is the oatmeal for you! You Need: 2/3 cup old fashioned, quick baking oats 1/3 cup unsweetened vanilla almond milk 1 tablespoon semi-chocolate chips 1 tablespoon chocolate peanut butter PB2 First, cook your oats…
