Skinny Pickled Deviled Eggs

"10-Recipes-to-Bring-to-your-Memorial-Day-Party"

It's funny to look back on childhood memories and compare your experiences to ones your friends had. Some we share, like going to private school then switching to public school and the all horrendous outfit choices you made your first year now that you had the choice of wardrobe. (I literally wore a blue snake-skin cheetah shirt that tied up in silky back string my first day of 5th grade and still remember it to this day... ugh.) While some experiences were vastly different. You should have seen my boyfriends face when he asked me what I was making and I told him pickled eggs. "Uh... pickled eggs????" I was, in return, shocked that he'd never had one before- something that my grandparents would keep in bulk in their fridge and I would choose…

21 Day FIx, Breakfast, Dinner, Lunch, Recipe Box, Sides, Snacking, Sweet Tooth, What I Ate On Wednesday

What I Ate on Wednesday; Vol. 3

"Easy weekday meal ideas"

One question I’m frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day. From the post: Homemade Acai Berry Bowls As an easier guide besides “check out some breakfast and lunch ideas on my blog!”, composing a post that gives an exact depiction of what I eat from the time I wake up to the time I go to sleep seemed a lot easier. I'm a big believer in eating foods that are healthy for you. I don't count calories, I rather keep track of food groups + the nutrients that I put into my body. I'm currently on the 21 Day Fix, which provides healthy workouts (only 30 minutes per day- yesss)…

Chocolate Covered Almond Protein Bites

"Chocolate-Covered-Almond-Protein-Bites"

I have officially found my newest favorite snack. Although, these are more of a supplemental meal of sorts. They are packed with dense nutrition- a full serving of fruit, protein, as well as a healthy fat. My biggest downfall when it comes to nutritional health will always be my sweet tooth. For my last meal, I'd probably choose a 1/2 baked, warm chocolate chip cookie... or the center of a Cinnabon.. or a warm brownie... you get the gist. ;) I've found ways to curb my sweet tooth with healthy alternatives, like these peanut butter brownies, balsamic baked berries, PB&J thumb print cookies, chocolate blueberry cupcakes with a whipped peanut butter frosting, and this baked chocolate peanut butter banana, but these seriously take the cake. The best part is that they are SO easy.…

Healthy Teriyaki Vegetable “Fried” Rice

"Healthy-Homemade-Vegetarian-Fried-Rice"

One of my favorite ways to cook is to take classic comfort foods and try to make them healthy. Sometimes they don't always work out, but then there's times like this (or that time) where the recipe comes out and you can't believe that it's healthy and you probably won't ever go back to the take out version. Do you remember my latest post on my recipe for teriyaki roasted veggies? Well, I used those to create this healthy "fried" rice! I love it when recipes are versatile and you can change up how you want to use them. This recipe is a good mix of both fresh and roasted vegetables, fluffy eggs, brown rice, salty feta cheese, and tons of different spices! I made my vegetarian (because if you didn't know, I am…

Teriyaki Roasted Veggies

"Teriyaki-Roasted-Vegetables"

When it comes to roasting vegetables, I'm a huge fan. I've always been a huge fan of veggies in any sort (when I was about 5, my favorite food was salad; I was a weird child) ;) . When you add teriyaki in the mix, you have me sold. When you roast or bake meals with a sugar element in it (like balsamic or, in this case, teriyaki, it crystalizes and provides an added crunch- yum!) This is my favorite go-to side dish. I eat these as a snack or add them to some rice & protein and make a meal! If you're interested in how you can make these more substantial, check out this recipe for my Teriyaki Chicken Stir Fry Bake. Here's What You Need: 3 cups of raw broccoli 2 cups raw…

Roasted Veggie Low-Carb Pizza ; 21 Day Fix Approved

"Roasted-Veggie-Healthy-Pizza"

I'm sorry I've been so MIA lately! I've been in the process of revamping my blog & had some personal changes happen lately in my life that my blog has taken a backseat. I'll be sure to do a recap post soon and fill you all in about what I've been up to lately (because a whole lot has changed since my last recap post!) One aspect I've been trying to focus more on in my life is my health again. I recently stepped up my involvement with Beach Body and became a coach! Remember when I did the 21 Day Fix? I fell back in love with it / the lifestyle, so I've been following that program again, just with my own modifications to fit my life more. Feel free to comment below…

Easy Winter Vegan Soup

Vegan Winter Soup

Occasionally, without intention, I'll whip up something random for dinner and it turns out amazing. This just causes one little problem for me (fellow bloggers, I'm sure you'll feel my pain), but since the recipe wasn't planned, I don't take pictures of the process- oops! With today's post, the outcome picture will just have to do. ;) I've been trying to follow a vegetarian diet for about 2 months now. For those reasons, I intentionally made this quick dish vegetarian, accidentally vegan, and it's also oil free! If you're like me and love quick dinners you can whip up, try out this soup. It reminds me a lot of my Zesty Fiesta Soup, just with a much simpler ingredient list. Here's what you need: 2 cans of corn [not drained] 1 can of black…

Avocado English Muffins; Simple Breakfast Ideas

avacado toast

If you're one of those people that are able to wake up before work or class, shower, get ready, and eat breakfast all before leaving your house, PLEASE teach me your ways! I am the absolute worst at it. To help myself with my morning laziness (or as I prefer, just prioritizing my beautiful bed), I've started incorporating quick meals I can make at my house before heading out the door. My latest obsession: avocado toast/English muffin From start to finish, this dish takes about 5 minutes total. It's composed of healthy fats & carbs to keep you full throughout the morning with healthy energy! Not to mention, it's amazingly tasty. Here's what you need: 1 whole wheat English muffin [I use the light 100 calorie ones] 1/2 avocado 1/8 fresh lemon Black pepper…
